Super Quick Healthy Vegetarian Black Bean Tacos

These healthy vegetarian black bean tacos are a nutritious and delicious option for a quick and satisfying meal and they even make a great appetizer to serve at parties. This recipe combines protein-packed black beans, fresh vegetables, and Casa M’s Chain Reaction Seasoning and is an adaptation of an earlier home recipe of mine – Black Bean Dip – found in one of my earlier cookbooks – Amy’s Favorite Recipes. This dip was such a great hit at our parties, that I thought it would make a fabulous vegetarian black bean taco recipe. And it does!

I substituted many of the spices in my dip recipe for Casa M’s Chain Reaction Spice. Their spice has the right combination of spices and makes these vegetarian black bean tacos super easy to put together. No need to hunt for various spices when it’s all done for you in one blend! Hardly any cooking, just sauté the onions, add the rest of ingredients and serve! You can easily add meat to this recipe such as grilled chicken or steak but these vegetarian black bean tacos are great all on their own! Serve them in warm tortillas topped with avocado, salsa, and a squeeze of lime for a healthy and mouthwatering taco experience.

Chain Reaction is my favorite spice from Casa M Spice Co®. You can use it literally on everything! The perfect combination of spices. It comes in “original,” “controlled-half heat,” and “uncontrolled – 2x heat” levels. While I do love the “uncontrolled,” I recommend starting with “original,” when first purchasing it.

How to make Healthy Vegetarian Black Bean Tacos in pictures:

Heat oil in a medium nonstick skillet. Add onion and garlic and sauté until tender. Add beans, tomato, salsa, cumin and Casa M’s Chain Reaction. If you like spicy use about 1 tablespoon of Chain Reaction, if you’re not sure, use 1/2 tablespoon.

Cook for about 5 minutes or until thickened slightly. Turn off heat. Add cilantro and lime juice.

Place in street size – corn or flour tortillas. Top with sour cream, Monterey Jack cheese and cilantro garnish if desired.

Ingredients
  

  • 2 cans black beans, drained
  • 2 teaspoons olive oil
  • 1 onion
  • 4 garlic cloves, minced
  • 1/2 cup tomatoes, diced
  • 1/3 cup salsa
  • 1 teaspoon cumin
  • 1/2 -1 tablespoon Casa M Chain Reaction Spice
  • pinch of kosher salt
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice – fresh
  • 15 street tacos – corn or flour tortillas

Instructions
 

  • Heat oil in a medium nonstick skillet. Add onion and garlic and sauté until tender.
  • Add beans, tomato, salsa, cumin, pinch of salt and Casa M's Chain Reaction.
  • Cook for about 5 minutes or until thickened slightly.
  • Turn off heat. Add cilantro and lime juice.
  • Place in street size – corn or flour tortillas. Top with sour cream, Monterey Jack cheese and cilantro garnish if desired.
