Super Quick Healthy Vegetarian Black Bean Tacos

These healthy vegetarian black bean tacos are a nutritious and delicious option for a quick and satisfying meal or even makes a great appetizer to serve at parties. This recipe combines protein-packed black beans, fresh vegetables, and Casa M's Chain Reaction Spice.

Ingredients
  

  • 2 cans black beans, drained
  • 2 teaspoons olive oil
  • 1 onion
  • 4 garlic cloves, minced
  • 1/2 cup tomatoes, diced
  • 1/3 cup salsa
  • 1 teaspoon cumin
  • 1/2 -1 tablespoon Casa M Chain Reaction Spice
  • pinch of kosher salt
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice - fresh
  • 15 street tacos - corn or flour tortillas

Instructions
 

  • Heat oil in a medium nonstick skillet. Add onion and garlic and sauté until tender.
  • Add beans, tomato, salsa, cumin, pinch of salt and Casa M's Chain Reaction.
  • Cook for about 5 minutes or until thickened slightly.
  • Turn off heat. Add cilantro and lime juice.
  • Place in street size - corn or flour tortillas. Top with sour cream, Monterey Jack cheese and cilantro garnish if desired.
