Super Quick Healthy Vegetarian Black Bean Tacos
These healthy vegetarian black bean tacos are a nutritious and delicious option for a quick and satisfying meal or even makes a great appetizer to serve at parties. This recipe combines protein-packed black beans, fresh vegetables, and Casa M's Chain Reaction Spice.

- 2 cans black beans, drained
- 2 teaspoons olive oil
- 1 onion
- 4 garlic cloves, minced
- 1/2 cup tomatoes, diced
- 1/3 cup salsa
- 1 teaspoon cumin
- 1/2 -1 tablespoon Casa M Chain Reaction Spice
- pinch of kosher salt
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons lime juice - fresh
- 15 street tacos - corn or flour tortillas
Heat oil in a medium nonstick skillet. Add onion and garlic and sauté until tender.
Add beans, tomato, salsa, cumin, pinch of salt and Casa M's Chain Reaction.
Cook for about 5 minutes or until thickened slightly.
Turn off heat. Add cilantro and lime juice.
Place in street size - corn or flour tortillas. Top with sour cream, Monterey Jack cheese and cilantro garnish if desired.
