Oven Roasted Cedar Plank Vegetables

These Healthy Oven Roasted Cedar Plank Vegetables are super easy to make, taste delicious and will impress your guests. All you do is soak the planks at least 15 minutes, arrange vegetables, season and bake. That’s it! Gorgeous fresh tasting vegetables without the fuss! No mess either! Just throw the planks away when done. Serve them as a side dish or toss them over salads for a main dish.

Plan to do them alongside your main dish

These vegetables are so easy to make and go well with any main dish. You can bake them right alongside your main dish if your temperature is 350°-400°. You may need to adjust the time so keep that in mind. They make the perfect side dish to my Oven Baked Cedar Plank Salmon, and also go great with Even Better Than Granny’s Meatloaf. Really they go great with just about everything!

These vegetables are the perfect addition to Oven Baked Cedar Plank Salmon.

Try roasting the Cedar Plank Vegetables alongside Even Better Than Granny’s Meatloaf! You may need to bake them a few minutes longer since the oven temperature for that one is 350°.

How to choose your vegetables

Choose vegetables that cook in about the same time. Red peppers, asparagus, mushrooms, zucchini, onions, green beans, brussels sprouts (cut in half) , broccoli and carrots (cut in small pieces) all work well. Potatoes take longer but if you partially cook them in the microwave or cut them up very small, that will work too.

When prepping for this post, I decided to buy 2 packs of 12 just so I could play around with the recipe. I’m so glad I did! I’m really having fun creating some new Cedar plank recipes! I found my Cedar planks (paid link) on Amazon. They are fabulous and I use them all the time because it’s so easy! My kids aren’t really veggie eaters but when you cook them this way, they can pick out the veggies that they like.

How to make Cedar Plank Vegetables in the oven:

Be sure to soak the planks in hot water for at least 15 minutes. I soak mine in a 9×13 glass pan and put 2 bowls on top so the planks stay submerged in the water. You can soak them longer if you want but really 15 minutes is all you need! Read this interesting post about why!

Preheat oven to 375°. Arrange the Cedar planks (paid link) on a baking sheet (paid link) for easy prepping. Arrange vegetables on planks. Spray with olive oil and season.

Position the planks on the top rack so that the hot air circulates around them and place a baking sheet (paid link) on the rack below. Bake for about 20-25 minutes. That’s it!

Choose a variety of vegetables to lay on the Cedar planks (paid link). Vegetables on these planks include asparagus, chanterelle mushrooms, cremini mushrooms, green beans and zucchini.

Ingredients
  

  • Cedar planks -1-2 depending on how many vegetables you are making
  • asparagus
  • brussels sprouts cut in half
  • mushrooms
  • green beans
  • zucchini
  • olive oil spray
  • kosher salt
  • freshly ground pepper

Instructions
 

  • Preheat oven to 375°.
  • Soak Cedar planks in hot water for at least 15 minutes.
  • Wash and trim vegetables.
  • Arrange on Cedar planks. Try not to pile up vegetables too much but spread out as much as possible.
  • Spray with olive oil spray. Sprinkle with kosher salt and freshly ground pepper.
  • Bake for about 20-25 minutes until done.

Notes

You want to choose vegetables (such as asparagus, mushrooms, zucchini, green beans, broccoli and carrots cut in small pieces) that will cook about the same time. Potatoes don't work as well unless you partially cook them before hand in the microwave.
