Broiled Scallop Prosciutto Bacon Bundles

These broiled scallop bacon bundle appetizers are quick to put together, delicious and make a great impression on your guests. They are a simple, yet elegant appetizer. These broiled scallops are also great as a main course. I like to eat a few of them along with vegetables and a salad – a nice light, great tasting and healthy dinner.

Why use prosciutto and not bacon to wrap the scallops?

Of course bacon always tastes great but using prosciutto is a bit healthier. Plus prosciutto when sliced so thin, makes a nice “purse,” or bundle for the scallops. Use bacon crumbles for inside the bundles.

How to blanch the green onions for tying

The reason you want to blanch the green onions is so they are pliable enough for tying the bundles. In addition, if you blanch them, they don’t get burnt in the broiler. It’s easy! Here’s how!

  • In a small saucepan, bring enough water (to cover the green onions) to boil.
  • Trim both ends of the green onions.
  • Cut them into long strips.
  • Add the green onions to boiling water and boil for about 1 minute.
  • Drain and place in ice water. Drain again and pat dry.
  • Tie bundles using the blanched onions.

To make the bundles: place a scallop on top of a slice of prosciutto, brush with melted garlic butter, sprinkle with homemade chipotle seasoning (paid link) and top with bacon bits and jalapeño.

Twist the prosciutto around at the top.

Tie with a green onion. Or you can just wrap the green onion around the top of the bundle.

Spray bundles with olive oil spray (paid link).

Broil for 6-8 minutes until the scallop temperature reaches 115°. After removing from broiler, the final temperature will end up about 125°.

How to cook scallops in the oven

There are two ways to do this recipe and cook scallops in the oven. You can broil the scallops for about 6-8 minutes or you can bake them at 350° for about 15 minutes. Be sure and test the scallops with a thermometer (paid link) to make sure they are done. They need to be at least 115° when you pull them out and with carryover cooking by the time you get them out the final temperature should reach about 125°-130°.

These little broiled scallop bacon bundle appetizers are quick to put together, delicious and make a great impression on your guests. They are a simple, yet elegant appetizer. Ingredients
  

  • 6 slices of prosciutto try to find super thin slices (about .5 oz each)
  • 6 large sea scallops if frozen, thaw overnight in refrigerator, rinse and pat dry
  • 1/2 T. butter
  • 2 cloves garlic minced
  • 1/2-1 jalapeno finely chopped (optional)
  • 1 T. homemade chipotle seasoning or use store bought seasoning
  • 2 T. crumbled bacon
  • olive oil spray
  • green onions trimmed and cut into long strips
  • cilantro garnish

Instructions
 

  • In a small saucepan, bring enough water (to cover green onions) to boil.
  • Add green onion tops to boiling water and boil for about 1 minute.
  • Drain and place onions in ice water. Drain again and pat dry.
  • In a small bowl or custard cup, combine melted butter and garlic.
  • Place a slice of prosciutto down on a cutting board. Place a scallop on top. 
  • Brush with the melted garlic butter. Sprinkle homemade chipotle seasoning on top.
  • Bring up ends of prosciutto together. Twist prosciutto at the top, try to tuck everything in and tie top with a piece of green onion.
  • Broil for 6-8 minutes until scallop temperature reaches 115°. Final temperature ends up being around 125°. Top with cilantro for garnish.
  • To bake these instead, preheat oven to 350°. Bake for about 15 minutes until temperature reaches about 115°. Serve immediately.

  1. To serve, carefully peel away the lettuce leaves and line a large platter with the lettuce cups. Top each with a bacon wrapped scallop, 2 slices of avocado, and a spoonful of spicy mayonnaise. Garnish with cilantro leaves.
