This Healthy Instant Pot Spiced Chicken Lettuce Wrap recipe makes a fantastic chicken bowl. Just serve it over rice (or cauliflower rice) and greens! Garnish with some chopped peanuts and green onions. Boom! You’re done!
How to Make Healthy Instant Pot Spiced Chicken Lettuce Wraps in pictures:
Gather your ingredients! Don’t forgot Casa M’s Texas Twister®! It’s the star of the show in this dish.
Trim off the visible fat of the chicken thighs. I like to use chicken thighs because they are more tender and juicy vs breasts. Chop the chicken into bite size pieces. Or you can grind it up in the food processor if you wish.
Sauté the onions for a few minutes. Then add in garlic and the Casa M Texas Twister ® spice blend.
Sauteing the Texas Twister® Spice Blend – for even just a few minutes, opens up the spices.
Add the chicken, make up the sauce ingredients and pour over the chicken mixture. Pressure cook on high for 5 minutes. Release pressure immediately.
Arrange lettuce leaves on a plate. Sprinkle with shredded carrots. Allow guests to dollop chicken onto the leaf, add chopped peanuts and green onions and roll up their own lettuce leaves. Serve with homemade hoisin sauce or a little soy sauce if desired.
Instant Pot Spiced Chicken Lettuce Wraps
Ingredients
- 3 lbs chicken – boneless, skinless thighs or ground chicken you can also grind your own thighs in food processor if you want the chicken ground
- 1/2 onion, chopped
- 1-2 tablespoons Casa M Texas Twister
- 4 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2/3 cup soy sauce – low sodium
- 1/2 cup chicken broth
- 3 tablespoons brown sugar
- 2 tablespoons rice wine vinegar
- 1 tablespoon sriracha
- 2 teaspoons sesame oil, divided
- green onions for garnish
- shredded carrots
- shredded kale
- peanuts, chopped (optional garnish)
- 1/4 cup Homemade Hoisin sauce (optional)
Instructions
- In a small bowl or liquid measuring cup, combine: soy sauce, chicken broth/water, brown sugar, rice vinegar, Sriracha and 1 teaspoon sesame oil. Set aside.
- Press "Sauté" on Instant Pot. Add remaining 1 teaspoon of sesame oil to Instant Pot liner. When oil is hot, add onions. Cook for a few minutes.
- Add garlic, ginger, Texas Twister and cook 1 more minute to open up the spices. Do not let the garlic burn.
- Add chicken and sauté for another 2 minutes.
- Pour in soy sauce mixture. Push, "Manual," and set to 5 minutes on high pressure with sealing knob closed.
- Release pressure immediately when done.
- Serve over rice, shredded carrots, shredded cucumbers or shredded kale. Garnish with chopped green onions. Serve with my homemade Hoisin Sauce if desired.
