This healthy stir fry recipe is made with vegetables and meat you have on hand in your refrigerator. You can use pretty much any protein – beef, chicken, pork, ground turkey, shrimp and whatever vegetables you have in the fridge. The key to this delicious and easy stir fry recipe is the stir fry sauce – a delicious homemade hoisin sauce, which brings it all together and makes it taste great!
How to make Clean Out Your Refrigerator Stir Fry in pictures:
Cut the vegetables into bite sized pieces.
If using beef, slice the beef against the grain into bite sized pieces. If using chicken, cut into bite sized pieces. If using ground beef, or ground pork, no need to cut.
If using beef, pat the beef dry before frying it in the wok (paid link)/pan. Salt.
I use a seasoned wok (paid link) for this recipe but you can also use a big nonstick skillet (paid link). Fry the beef or chicken pieces in batches. Remove to plate when finished. If using ground meat, fry until almost done, remove and drain if needed.
Heat wok (paid link)/pan to medium, when hot, add oil, garlic and ginger. Add vegetables and sauté until desired doneness.
Add cooked meat and homemade hoisin sauce. Heat until everything is hot.
Serve hot over rice or cauliflower rice. Allow guests to add more sauce if desired.
How to make the Stir Fry Sauce (Homemade Hoisin Sauce)
While this homemade stir fry sauce (homemade hoisin sauce) does include quite a few ingredients, it’s super easy and quick to make!
- Gather the ingredients.
- Blend the soy sauce (paid link), peanut butter, honey, rice vinegar, garlic, sesame oil, sriracha (paid link) and black pepper in a bowl or container. Use an immersion blender (paid link) for best results. That’s it!
If you just want to make the sauce for this stir fry, then you only need to make half of the Homemade Hoisin Sauce recipe. But the sauce is so good, you might want to make a full batch. It will keep in the refrigerator for at least a week.
Clean Out Your Refrigerator Stir Fry
Ingredients
- 1 lb. fresh meat or frozen, thawed such as top sirloin, ground beef, chicken thighs or breasts, ground turkey, ground pork or pork chops cut into bite sized pieces, or shrimp
- kosher salt
- 3 T. Homemade hoisin sauce this sauce is super quick to make or you can use store bought
- 1 T. fresh ginger
- 2 garlic cloves minced
- 2 T. sesame oil or vegetable oil divided
- 6 c. fresh vegetables use a variety of what you have such as: carrots, mushrooms, red or yellow peppers, onions- any -green, red, sweet, broccoli, broccolini, snow peas, sugar snap peas, green cabbage, kale, bok choy, radishes, jalapeños
- 1-2 T. sriracha sauce if you wish to make it spicer
Instructions
- Cut vegetables into small bite sized pieces. I usually put them all together in a big bowl.
- If not using ground meat, cut the meat into bite sized pieces. Pat with a paper towel to remove excess moisture. Sprinkle lightly with kosher salt.
- In a large nonstick skillet or wok, heat about 1 T. sesame oil until hot.
- Add meat (cook in batches if needed). Stir fry just until done. (With beef, cook until barely pink). With fattier cuts, drain the grease if needed. Remove from pan and place on a separate plate or bowl.
- Add 1 T. sesame oil to wok/pan.
- Add fresh garlic, ginger, and vegetables. Stir fry for about 3-8 minutes until almost tender. (It depends on how you like it, I like mine a little more cooked than raw but not over cooked). Add homemade hoisin sauce, cooked meat and heat until everything is hot. Add sriracha sauce if you like it spicier.
- Serve over cauliflower rice or rice.
