Instant Pot Spiced Chicken Lettuce Wraps

Ingredients
  

  • 3 lbs chicken - boneless, skinless thighs or ground chicken you can also grind your own thighs in food processor if you want the chicken ground
  • 1/2 onion, chopped
  • 1-2 tablespoons Casa M Texas Twister
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2/3 cup soy sauce - low sodium
  • 1/2 cup chicken broth
  • 3 tablespoons brown sugar
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon sriracha
  • 2 teaspoons sesame oil, divided
  • green onions for garnish
  • shredded carrots
  • shredded kale
  • peanuts, chopped (optional garnish)
  • 1/4 cup Homemade Hoisin sauce (optional)

Instructions
 

  • In a small bowl or liquid measuring cup, combine: soy sauce, chicken broth/water, brown sugar, rice vinegar, Sriracha and 1 teaspoon sesame oil. Set aside. 
  • Press "Sauté" on Instant Pot. Add remaining 1 teaspoon of sesame oil to Instant Pot liner. When oil is hot, add onions. Cook for a few minutes.
  • Add garlic, ginger, Texas Twister and cook 1 more minute to open up the spices. Do not let the garlic burn.
  • Add chicken and sauté for another 2 minutes.
  • Pour in soy sauce mixture. Push, "Manual," and set to 5 minutes on high pressure with sealing knob closed.
  • Release pressure immediately when done.
  • Serve over rice, shredded carrots, shredded cucumbers or shredded kale. Garnish with chopped green onions. Serve with my homemade Hoisin Sauce if desired.

Notes

This Instant Pot Spiced Chicken is great over spinach as a salad, in lettuce wraps, over shredded cabbage, carrots, kale or rice.  
 
Stove Top Directions: To make this Instant Pot Spiced Chicken on the stove, use a wok or frying pan.  Follow directions on recipe to sauté onions, garlic and fresh ginger for about 2 minutes. Add the chicken and cook until most of it is browned.  Add the sauce. Cover with a lid and let simmer for at least 10 minutes, stirring every so often.
